    Peanut Butter Cream Cheese Frosting

    Hereโ€™s a silky, creamy, perfectly smooth peanut butter cream cheese frosting that complimentsโ€ฆ wellโ€ฆ everything!  Itโ€™s pipeable, and is great to just eat with a spoon! It's totally keto friendly and low-FODMAP to boot.

    When I say โ€˜creamyโ€™, Iโ€™m not kidding! The combination of butter, cream cheese and keto friendly peanut butter makes the texture of this low-carb frosting like silk.ย  Itโ€™s not a super sweet frosting โ€“ I only use ยพ cup of powdered sweetener (I like to use Swerve Confectioners as a confectioners sugar substitute).ย  If you like a sweeter frosting, you can always add more to taste. And, if you're looking for more delicious keto peanut butter treats, try some Flourless Keto Peanut Butter Chocolate Chip Cookies.

    I originally whipped this up to frost a keto cookie cake.  Who doesnโ€™t love that peanut butter cookie flavor in a cake!  Honestly, you donโ€™t need a cake for this frosting.  I use it on my Easy Keto Brownies and also canโ€™t resist just dunking a spoon into it.

    Even though this peanut butter frosting with cream cheese sets up really well in the fridge, itโ€™s perfect for spreading at room temperature.

    I think once you make this recipe, youโ€™ll look for any reason to make more.  But do you really need a reason beyond simply LOVING it?

    Ingredients
      

    • 8 ounces cream cheese (softened)
    • ยฝ cup butter (1 stick at room temperature)
    • ยพ cup peanut butter
    • ยพ cup Swerve confectioners sweetener
    • 2 teaspoons vanilla extract
    • 1 teaspoon raw cacao powder (optional)

    Instructions
     

    • Soften the butter and cream cheese to room temperature.
    • In a medium sized bowl, cream the butter and cream cheese. I used an electric hand mixer for this.
    • Add the peanut butter, vanilla and cacao, if using.
    • Add the sweetener about ยผ cup at a time.
    • Blend until smooth and creamy.
    • At this time, it should be perfect for frosting or piping.ย  It will set up quickly in the fridge.

    Notes

    If you like a sweeter frosting, add more sweetener at about a tablespoon at a time.
    The raw cacao is optional.ย  It adds just a touch of flavor and color, but isn't necessary in this recipe.ย  You can also substitute the raw cacao for cocoa powder.

      Delicious, made as written. omitted the cocoa powder. light,and creamy. I mixed it for 8 minutes total.
